Our winemaking philosophy is simple

Our goal is to create top-quality Georgian wines, recognized globally. We constantly seek to improve, combining innovation with time-tested traditions. Every decision is guided by one principle: in vino veritas.


Terroir-Driven from the Start

Our process begins with a deep search for Georgia’s best terroirs. We travel across the country to match each grape variety with its ideal soil type — from clay and limestone to sandy loam and marl. Every site is selected based on climate, elevation, and soil structure — ensuring optimal balance and varietal expression.

Old Vines,
Strict Standards

We focus exclusively on vineyards over 50 years old. Some we observe and work with for years before making a decision. The top-performing sites are either acquired or partnered with under strict care protocols.

Vinification with Precision

We follow a strict, detail-oriented vinification process. Red wines are fermented with controlled temperatures to preserve purity and structure before being transferred to barrels. White wines undergo maceration, are gently pressed, then matured in either stainless steel or oak — depending on their profile. Every step is based on precision, not shortcuts.

Barrel Research &
Aging Philosophy

One of our core goals is to find the most compatible barrels for Georgian varieties — especially Saperavi. We experiment with different toasts and origins from top cooperages to identify what brings out the best in each terroir. Our wines age in barriques, and we’re never afraid of time. Whether it takes one year or two, we age until balance and character are fully achieved.

Akhasheni Vineyard

Acquired in early 2023, this vineyard lies in the heart of the historic Papari Fields, one of Kakheti’s most celebrated winemaking zones. Known for its consistent ripeness and balance, this site has become a cornerstone of our Saperavi production.

Anaga Vineyard

Located on the border of Anaga and Kardenakhi, this vineyard was first used in our 2021 vintage. Since 2024, we’ve taken over full care of its cultivation, elevating its potential through precision viticulture.

Gardabani Vineyard

Planted in 2022 directly in front of our winery, this experimental vineyard includes Cabernet Sauvignon and Saperavi. While young, it reflects our commitment to hands-on care and long-term terroir research.

Okureshi Vineyard

Located in the Lechkhumi region, Okureshi Vineyard is not owned by us but is maintained by a trusted local family with exceptional care and dedication. For several years, we have been sourcing high-quality Tsolikouri grapes from this site, known for its clean viticulture and consistent expression of the Lechkhumi terroir.
